Turkey Strips with Broccoli and Rice
Turkey strips and tender-crisp broccoli in a light soy sauce, served with rice. Quickly cooked in one pan.

Ingredients
- 150 g turkey breast
- 120 g broccoli
- 150 g cooked rice
- 1 tsp rapeseed oil
- 1 tbsp soy sauce
- 1 tsp lemon juice
- 1 tsp cornflour
- 3 tbsp water
- Pepper, to taste

Slice the turkey and broccoli
Slice the turkey thinly across the grain. Cut the broccoli into small florets and thinly slice the stem.

Mix the sauce
Whisk the soy sauce, lemon juice, cornflour and water until smooth.

Sear the turkey
Heat the oil in a large pan over medium-high. Sear the turkey for 3–4 minutes, then transfer it to a plate.

Steam the broccoli
Cook the broccoli in the same pan for 2 minutes, add 2 tablespoons of water, cover and steam for 3 minutes until tender-crisp.

Bring it together
Return the turkey and add the sauce. Stir for 1–2 minutes until lightly thickened and the meat is fully cooked. Serve with the warm rice.
Tip
Slicing across the grain makes the quick-cooked turkey noticeably more tender.
